Why I add Bok Choy to most of my green juices
When I started juicing I was looking for greens that produced a good amount of juice to save time and money. The first time I tried juicing Bok Choy I was amazed at how much juice I got, the stems were loaded!
I honestly never cooked with Bok Choy at home but I have had it in dishes when eating out. When I found out this was the best cruciferous vegetable to juice I was hooked and have been using it ever since.
What does this juice taste like
The taste is not bitter or sweet, I found it to be well balanced but if I needed sweeter I would just add a little more pineapple after all little goes a long way when it comes to juicing pineapple.
Why add black pepper?
The pepper’s purpose is to enhance the curcumin in turmeric by activating it. According to research, combining piperine with curcumin in turmeric increases curcumin absorption by up to 2,000%. You don’t have to add it but I highly recommend it.
Just be careful not to let the pepper settle to the bottom, you might want to keep stirring the juice as you drink it.
How to make this green juice
Every juicer is different and mine has a small feeding tube so I have to cut everything into small long pieces for it to work well.
Start with the softer stuff and finish with the kale that is what worked the best for me.
I like large servings of juice feel free to cut the ingredients in half for a 16oz glass.
Pine Choy Green Juice
Ingredients
- 3 large leaves of bok choy with stems
- 1 cucumber
- 1/2 teaspoon turmeric powder or 2” fresh turmeric
- 1 lemon, peeled
- 4 large leaves of kale
- a small handful of Italian parsley
- 1/2 tsp of freshly ground black pepper
- 1/4 of a fresh pineapple
Directions
- Wash all your ingredients
- Peel the lemon and the turmeric for a better taste
- Cut and prepare all your ingredients for your juicer
- Add the black pepper to the finished juice and stir
- Enjoy!
